Striving for the perfect rosti

My first attempt at making salmon rosti for brunch. I think I did pretty well! The first time I've tried rosti was in Shiz's hometown, Singapore, at a Swiss restaurant called Marche's. Rosti is made of coarsely-grated potato, pan fried with cheese and butter, and can be topped with pretty much anything.

The grated potatoes turned out finer and more compact when fried, mainly because of the small grater holes. It was kind of spongy at first bite. I topped my rosti with smoked salmon and sprinkled it with paprika. Don't forget black pepper if you want to make this. I only remembered at the end!
